Ingredients
- 2160g Chicken leg quarter, uncooked and cleaned
- 1 Spray and Cook
Marinade:
- 45ml Mrs. Balls Jalapeno Chutney
- 45ml All Gold tomato sauce
- 45ml Colman’s Hot English mustard
- 45ml white wine vinegar
- 1 Benny’s chicken seasoning sachets
Method
- Mix all the marinade ingredients together in a large bowl.
- Place chicken in the marinade and baste to ensure entire chicken is covered.
- Marinade the chicken 4-6 hours or overnight in refrigerator.
- Preheat oven to 180°C.
- Take chicken out of marinade and place in a greased baking tray.
- Turn down the heat to 160°C and bake chicken uncovered for 1 hour or until cooked through, basting often with marinade.
- Remove chicken from oven once cooked. (ensure clear liquid runs out once pricked)
- Garnish Chicken and serve.
