Mexican Fusion Corn Bread

Mexican cornbread is a fantastic side dish for Chilli Con Carne or Southern cuisine. KOO Corn not only binds the ingredients but also enhances the flavour and adds delightful texture to the cornbread.
Ingredients

Yield: 8 portions   

  • 250 g Butter, melted
  • 100 g White sugar
  • 4 Eggs
  • 1 can 410g KOO cream-style corn
  • 30 g Sliced jalapeno chillies
  • 400 g All Gold Tomato and Onion Mix
  • 100 g Gouda cheese, grated
  • 100 g Cheddar cheese, grated
  • 120 g Golden Cloud Cake Flour
  • 140 g ACE Maize Meal
  • 20 ml Baking powder
  • 2,5 ml Salt
Method
  1. Preheat the oven to 150°C.
  2. Lightly grease a 20 x 30 cm baking dish.
  3. Beat together butter and sugar in a large bowl. Beat in eggs one at a time. Blend in corn, chillies, All Gold Tomato and Onion Mix with the cheese.
  4. Stir together flour, ACE Maize Meal, baking powder, and salt in a separate bowl. Add flour mixture to corn mixture; stir until smooth. Pour batter into the prepared pan.
  5. Bake in the preheated oven for 1 hour, or until a toothpick inserted into the centre of the pan comes out clean.
