Chilli Con Carne

Chilli Con Carne

This Afro-Mexican Chili con Carne combines vibrant Mexican flavours with a unique South African twist, featuring KOO corn and black beans. It's a delicious, hearty, and budget-friendly dish, perfect for adding warmth and richness to any winter menu.
Ingredients

Yield: 8 portions  

  • 1.5 kg Ground Beef (Lean) (Replace with KOO Chickpeas and Butterbeans for a Vegetarian option)
  • 30 ml Olive Oil
  • 100 g Onions, Diced
  • 20 g Cloves Garlic, Minced
  • 180 g Bell Peppers (Any Colour), Diced
  • 800 g All Gold Tomato and Onion Mix
  • 800 g KOO Black Beans, Drained And Rinsed
  • 140 g All Gold Tomato Paste
  • 1000 ml Hot water (mixed with Benny Beef Stock Cube) 
  • 2 cubes Benny Beef Stock Cube
  • 45 ml Chili flakes (adjust if you prefer less heat)
  • 10 ml Ground Cumin
  • 10 ml Paprika
  • 5 ml Dried Oregano
  • 2 ml Cocoa Powder
  • Salt And Pepper to taste

Optional Toppings: Shredded Cheddar Cheese, Sour Cream, Chopped Fresh coriander, Guacamole, Sliced Green Onions

 

 

 

Method
  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the diced onions and cook until softened, about 5 minutes.
  2. Add the minced garlic to the pot and cook for an additional minute until fragrant.
  3. Add the ground beef to the pot and cook, breaking it apart with a spoon, until browned and cooked through, about 8 - 10 minutes.
  4. Stir in the diced bell peppers and cook for another 5 minutes, until they begin to soften.
  5. Add the All Gold Tomato and Onion mix, KOO black beans, All Gold tomato paste, Benny beef broth, chili powder, ground cumin, paprika, dried oregano, and cocoa powder to the pot. Stir to combine.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let the chili simmer gently for 1-2 hours, stirring occasionally, to allow the flavours to meld and the chili to thicken. Add more broth if needed to reach your desired consistency.
  7. Taste the chili and season with salt and pepper to taste.
  8. Serve the chili con carne hot, garnished with optional toppings such as shredded cheddar cheese, sour cream, chopped fresh cilantro, guacamole and sliced green onions. Serve alongside Tastic Rice, Corn bread, or turn into a burrito with Albany wraps.
